Broccoli Soup

So quick and easy and so so delicious; a great example of a few good quality ingredients making a meal that is far greater than the sum of its parts.

Serves 4


1 head of broccoli (about 450g)

1 litre of veg stock 

Olive oil 

Black pepper




Chop the head of broccoli (stalks and all) in to even-ish sized pieces and simmer in 1 litre of veg stock for 5 minutes or until the broccoli is tender.  

Add a little black pepper and blend the broccoli in the veg stock until smooth. 

Check the seasoning and stir in a little more neat veg stock directly to the soup if needed. 

Portion into bowls, drizzle in a little olive oil and scatter a few croutons on top.  

To make croutons; cut some bread in cubes, toss in a little olive oil, spread evenly across a oven tray and bake for 10 minutes at 200C tossing half way through.
